Meet Phil Davis, the passionate, and highly energetic chocolatier that is known around the world for his chocolate tasting skills. He started studying chocolate when he was just eight years old, no wonder he is now co-owner of one the finest chocolate manufactures in the entire world. “I started studying chocolate when I was 8 years old, in which time I read an article about the ingredients that should go into good chocolate. Later in life I found myself searching the depths of Europe for the best-of-the-best-chocolate. I got to know some of the best chocolate makers and I started tasting prototypes, and I would give them my opinion, ‘this is too dark, too light, too much sugar or not enough, too much vanilla, or too little.’ I started writing up aroma flavor profiles and they started to put them on the back of boxes, and that’s when I realized that I did have one of the best chocolate palates in the world.“
About The Business
We asked Phil to tell us exactly what he was doing with these businesses. The answer was remarkable on many levels, Phil and the Coleman’s decided that even though there are some amazing chocolates out there, that they could do even better. “The Coleman’s and I got together and we decided to create what would become the world’s finest chocolate manufacture. We are very passionate about chocolate. Even among the world’s finest chocolate that’s being made, we feel that no chocolate manufacturer is creating chocolate at the level that it could be crafted at. So that was the genesis for this project. We are literally working with the finest cacao growers in the world that only supply the most prestigious European brand. For their heirloom Criollo we will be their second client. Every chocolate manufacturer in the world would kill for this cacao, and yet we’ve secured it. To make our vision a reality we had to have brand new technologies developed. We needed equipment that didn’t exist at the time we decided to create a chocolate manufacture. So we worked with the leading European chocolate equipment manufacturer for about a year, custom designing the ultimate artisan factory, and they really came through for us. They’ve created gorgeous equipment that really gives us an unparalleled level of control over every single step of the chocolate crafting process. It’s really that combination of the technology of the equipment and the quality of the cacao, which is allowing us to take chocolate to the next level. I have always been passionate about the best ingredients. I also have an expertise in balsamic vinegars, olive oils, and cheeses. I am actually a professional cheese taster, and chocolate has been a lifelong passion and hobby; now it’s a lifestyle and business.”
Taste not only showcases the best chocolate in the world, but also the best Olive Oils and Balsamic Vinegars. The two businesses, owned by Phil Davis and his friends, the Coleman’s, go hand in hand. They want to make the best chocolate in the world, and if they are going to do that, they need a place of the same caliber to showcase their years of work, “Taste has been open for a few months; we needed a place that we could present our chocolate, and we needed a place whose décor would match the chocolate that we were going to be presenting. We brought in marble from Carrera, Italy. We have gorgeous hand painted and gilded wood floors, etc.” Says Phil.
Part of Taste’s mission is to help people understand something they have never experienced, and never would have. Knowing how to properly taste the chocolates, oils, and vinegars they are showcasing is key, and they will teach you in the most professional way possible. “The world of high end chocolate is really about educating people. That’s what Taste is about. It’s about educating palates and elevating them, showing things to people that they never knew existed. With Taste, it’s about chocolate, but it’s also about a lot of other things. Once we have educated and elevated palates, people can comprehend what we are making and crafting in our own chocolate factory. Taste is the first store of its type, but we intend to open them all over the world, and Coleman Davis Chocolate will be sold all over the world— throughout Europe, the Middle East, Asia, here in the U.S. at high end specialty retailers and gourmet chocolate shops. We’re also crafting a line of chef’s chocolate, for the world’s most discriminating chefs. We are already in touch with many of the 3 Michelin Star chefs, and restaurants in the U.S. and soon will be in touch with Michelin Star chefs all over the world helping them take their craft to the next level by giving them an even better ingredient.”
Earlier Phil said, “chocolate has been a lifelong passion and hobby, now it’s a lifestyle and business.” So what is his advice to entrepreneurs, or any one looking to do something similar in their lives?
“Develop a passion, something that you do because you love it, and become an expert in it. Figure out how to become THE BEST in whatever it is that is your passion, and turn that into a business. Don’t be deterred by detractors. We live in a world where quality isn’t appreciated by the masses, and by business people in general. Everything is just about the bottom line, and how can I maximize profit. But if you make something extraordinary, the best-of-the-best, the profit will come.” Take Phil’s advice, it worked for him. Find a passion and go for it. Phil finished with this, “People are going to try and stop you, shut you down, tear you down, make you believe that excellence is somehow odd, but don’t believe them.”
